Zincs key nutritional roles are growth in children and tissue repair and maintenance in adults. Unlike other minerals that act as enzyme cofactors, zinc is a component of more than 200 enzymes. Most of these enzymes are involved in protein and DNA synthesis. Consequently, if zinc is not available when enzymes are produced, these enzyme levels decrease. Those prone to zinc deficiencies may suffer from growth retardation; poor appetite, under functioning sex glands; mental lethargy, delayed wound healing, abnormalities of taste, smell, and vision; skin changes; and, increased susceptibility to infection. Zinc supplements are particularly important to vegetarians, since only a small amount of zinc found in plant foods is available for absorption.
